Role Purpose :
To lead, manage and organize all aspects of food production to the highest professional standards and in accordance with the standard operating procedures as laid down by the General Manager. Responsible for proper sanitation in the production area, well stocking, proper storage, intra-department coordination, work and vacation schedules, food sales program, quality control and production cost calculations.Key Responsibilities :
To be personally responsible for training and giving instructions to staff Supervises the food production and staff. Ensures that the reputation and image of the food of the operation be retained and improved at all times.. Display creativity in the sales programs, flexibility in customer demands and adaptability to the market. Formulate clear statement of objectives in order to maintain an excellent reputation in the eye of the public,the owners,the guests and the staff. Negotiates salaries with team members to be hired in accordance with the approved salary scales. Decides on salary increases for staff in accordance with the approved budget provisions. Responsible for the proper briefing of the service staff with regards to specials, specialties, seasonal offers and promotions. Plans menu for special occasions. Ensures proper scheduling of staff in accordance to the expected work-load. Controls and enforces the set vacation limits. Maintains a performance record of each member of the kitchen staff for assessment purposes. Assumes full responsibility for the costing of all food items produced. Carries out daily briefings with the production staff. Responsible for proper storage of food items throughout the operation. Responsible for the proper receiving procedures of food items. Visits local markets at least once a month in order to ensure proper selection and purchase of food items and to get a first hand feeling of the available items and monitor if the items are purchased at lowest price for specified quality. Carries out other duties that may from time to time be assigned to him.

Minimum 5 years restaurant experience, with at least 2 years in a similar position.
Must be team oriented and to be able to cope with a high volume of business.
